My Go-To Picnic Meal: Italian Caprese Sandwiches & Charcuterie
/One of my favorite things to do with my family and friends is to pack a picnic and head to the beach to watch the sunset. The cool evening air, the sunset, the sound of the ocean: it all just brings me so much joy. We do this so often I have really dialed in my favorite picnic meal for just this. It is simple to make, and yet it still feels elegant and special. So I thought I would share the meal here with you!
The only recipe needed is for my Italian Caprese Sandwich, which is very easy and you can find below! I always serve it with a simple spring mix salad and a little charcuterie board, and of course a bottle of wine (for those who aren’t pregnant and can partake ;)) For the board, I keep it simple: cabot extra sharp white cheddar (literally the best cheese ev-er), italian peppered salami, crackers, and red grapes.
We picnic so often that I always keep our picnic blanket in the trunk so it’s ready to go. And then I just prepare the food and pack it all in our picnic backpack (similar ones found here and here), and off we go on our little adventure.

Caprese Sandwiches
- French Baguette
- Favorite Pesto (I usually keep it simple and Trader Joe's Genova Pesto)
- Fresh Mozzerella Cheese (I buy the pre-sliced mozzerella loaf from Trader Joes
- Tomatoes on the Vine (Thinly Sliced)
- Fresh Basil Leaves
- Olive Oil
- Balsamic Glaze (Again, from Trader Joes. I'm obsessed.)
- Salt & Pepper
- Slice your french baguette open
- Generously spread the pesto on both sides
- Add the sliced Tomatoes, Sliced Mozzarella, and Fresh Basil Leaves.
- Drizzle wtih Olive Oil and the Balsamic Glaze
- Top 0ff with Salt & Pepper
- Then close the baguette and wrap it tightly with tinfoil
*I always pack a knife and cut it into 4-6 inch "subs" for us, and serve with a simple green salad.
