I have searched far & wide for the perfect Paleo Brownie Recipe, and alas, I believe I have found it. These brownies are rich, fluffy, and full of chocolatey goodness. Sometimes a girl just needs a chocolate fix, and these allow me to indulge guilt-free.

They are super quick & simple to whip up too. And I usually have the ingredients on hand, which is a plus (and also dangerous because I literally make them all the time).

Paleo Brownies

Ingredients

  • 1 Cup Creamy Almond Butter

  • 1 Egg

  • 1/3 Cup Pure Maple Syrup

  • 1 Tsp Vanilla

  • 2 Tablespoons Ghee (or sub melted grassfed butter)

  • 1/3 Cup Raw Cacao (or sub unsweetened cocoa powder)

  • 1/2 Tsp Baking Soda

  • 1/4 Cup Cacao Nibs (or sub dark chocolate chips)

  • 1/2 Cup Chopped Walnuts (optional) 

Instructions

  1. Preheat Oven to 325. 

  2. In a large mixing bowl, combine the almond butter, egg, maple syrup, vanilla, and ghee. Stir well, and then add in the cacao powder, baking soda, cacao nibs, and walnuts. Mix well.

  3. Next, spoon batter into a greased (or parchment paper lined) 8 x 8 baking dish. 

  4. Bake approximately 21-23 minutes.

  5. Let cool, serve & enjoy!

Pumpkin Cupcakes with Cream Cheese Frosting

   Fall is my favorite time of year, and I love anything pumpkin flavored. Pumpkin spice lattes, pumpkin loafs, pumpkin pies… you get the idea. This year I decided to make pumpkin cupcakes! I’ve seen this two ingredient recipe for pumpkin muffins/cupcakes floating around Pinterest and it sparked my interest. Two ingredients? Sounded too good to be true, but I had to give it a shot.

I decided to make homemade cream cheese frosting to go with it (similar recipe here). The verdict: they turned out moist and yummy! Granted, they probably aren’t as delicious as gourmet cupcakes that one might slave over for hours, but they’re still pretty dang good. 

Instructions: Preheat oven to 350. Combine 18.25 oz. package of cake mix (classic vanilla or spice cake work best) and 15 oz. can of pumpkin. Mix well and spoon batter into paper muffin cups. Bake for 20-25 minutes. Remove from oven and allow to cool for 10-15 minutes. Once completely cooled add cream cheese frosting, if desired (see link above).

Almond Chip Scones

   A few weeks ago my sister came into town to visit. Her flight came in mid morning, so we had a little brunch at my apartment after I picked her up. I wanted to keep it pretty simple with scones, a breakfast casserole, fruit, and coffee. This was my first time making homemade scones (I chose almond chip scones, similar recipe here) and was pretty pleased with the results. Overall, the brunch was a success!

Banana Nut Bread

Mmmm…. Banana nut bread. Classic. It pairs great with a cup of tea or coffee, and is so warm & comforting. I stumbled upon this recipe and decided to try it out. And I’m so happy that I did. This will be a recipe that I add to my family cookbook so that I can enjoy it for years to come.

On another note: I love giving baked goods as gifts, so I made an extra loaf to give to a friend for mother’s day. To dress it up a bit I wrapped it in plastic wrap and added ribbon and a charm. I already had these items in my craft drawer, and just used a small bit of hot glue to put it all together.
